light kneading for about 2 minutes
By: dedemed
Thanks Dede. How much time and how rigorous do you recommend the kneading? I dont have a machine, so have to depend on my hands for it :) Thanks again for the wonderful recipe. Nishant.

yes, do NOT over knead the dough, that is why bread becomes hard, you must be gentle with it and do NOT over knead it :)

Hi Dede, I tried making zaatar with your dough recipe. Though the taste was really good (almost like the ones we get here in bakeries) but i found that the bread was very hard. Any suggesstions?
By: Nishant Shah
yes of course, you can make it using a mix of ackawi cheese and mozarella :)
By: dedemed
isnt there something like this but with cheese in it?
By: 26dolla
actually either one works
By: dedemed
You mean cornmeal and not cornflour I am guessing ;)

different regions make it differently

I thought zataar was thyme, oregano, marjoram, roasted sesame seeds, sumac and salt?

By: SuperFatboy000
that is a great idea, the back of a wok over a grill I think would work best....hmmm I'm going to have to think of how to put this one together soon :)
By: dedemed
I like eating it with labne...and you can make it from scratch too...it's on my site :)
By: dedemed
you can make cheese manaeesh too, just top the dough with your favorite cheese and if you can find akawi cheese then it will taste super authentic :)
By: dedemed

By: dedemed
@virusboss93 you can top the dough with anything, check out my lahme bi ajeen recipe for the meat one, and for the cheese one just top the dough with your favorite cheese, preferrably akawi cheese :)
By: dedemed
@jyothibg- try a little citric acid, it gives a good tartness, also mix it in extra virgin olive oil.
