Spinach pies are found in almost every country along the Mediterranean but in different forms and under different names. This is just one of the versions that is very popular and can be served as a main dish or appetizer. Ingredients easy dough, see Dede's easy dough recipe 8 cups spinach 1/2 tsp salt 1 cup finely chopped onion 1 cup finely chopped tomato 1/4 cup lemon juice 1/4 cup olive oil 1/2 tsp citric acid 1/4 tsp cayenne pepper 1/4 tsp sumac 1/2 cup corn meal flour to roll out dough olive oil spray or brush to finish pies Directions Rinse 8 cups of spinach, if using regular spinach then chop up first. Combine the 8 cups of washed spinach with 1/2 tsp salt and let sit for 15 minutes. Drain and squeeze out water from spinach and place in a bowl. Add next seven ingredients to spinach and combine. Roll out dough balls to 1/16 inch thickness and 6 inches in diameter, place 1 to 2 tbs of spinach mixture in middle and close dough like a triangle. Sprinkle corn meal on baking sheet and place triangles on sheet. Pre-heat oven to 400 degrees, place pies in oven and cook for 8 minutes, then take them out and spray or brush them with olive oil, place back in oven for another 8 minutes. Serve warm or cold.

When I remove water from veggies like spinach, I put it in a large tea towel and wring it out. It will remove lots of water but not damage the leaves.

@lifoc well yes you do need the yeast to make dough. you can omit the corn meal, if you omit the sumac you will loose a little of the flavor, but you can buy sumac on my site at dedemed.com

Hi Dede, thanks for sharing! I love spinach pie & wanna try this one today. But 2 questions ... 1) can I substitute yeast with baking soda or skip yeast altogether in easy dough? 2) What's sumac & corn meal? Can I substitute those with anything or skip them? Oops, too many questions? :P

@anwarwalker89 yes you can use the ground beef, check out my samboosek recipe for how to prepare the ground beef for the filling. You can use this dough recipe or follow the samboosek recipe and use phyllo dough :)

@nayomi17 well you can buy sumac on my site, or if you do not have it, you can omit it, sumac adds a bit of sourness to the filling, but you can just cut up some lemon wedges and squeeze some lemon juice on top of the spinach when you eat it :)
