Shish Barak Recipe (Mediterranean Dumplings)

Dough
- 1 cup flour
- 1/2 cup water
- 3 tbs olive oil
Filling
- 1/2 lb ground beef
- 1/2 tsp salt
- 1/2 tsp DedeMed's seven spices
- 3 tbs olive oil
Yogurt sauce
- 6 cups Greek/Mediterranean yogurt
- 2 cups water
- 2 tbs corn starch w/ 3 tbs water
- 1 tsp garlic
- 1 tsp dried mint
- 1/2 tsp salt
Directions
First step is to make the dough, mix all 3 dough ingredients in a bowl and let rest for 15 minutes.Next, for the filling heat a pan then add the olive oil, beef, seven spices and salt and cook for 5 minutes until meat is browned, set aside. Flour a flat surface, roll out dough to ⅛ inch thickness and cut into 3 inch circles. Place 1 tbs of the meat filling in the middle of each circle, fold over one side of the dough and seal to the other side by pressing down, this will form a crescent shaped dumpling, repeat until filling and dough is used up. In a pot, add the yogurt and 2 cups of water, heat on medium low heat and continually stir, after 3-4 minutes, add the dissolved corn starch in water mix to the yogurt pot, stir and let simmer for another 5 minutes. Then add the garlic, mint and salt, stir well, slowly add the dumplings to the pot, let them simmer on low hear for 10-15 minutes. Serve warm.

This is a different ways to serve dumplings. It has a Mediterranean twist and is very flavorful and filling. This is great to make ahead by making the yogurt sauce and dumplings ahead and just heating the sauce and adding the dumplings when ready to serve.
great idea, I also like to sautee veggies and use that as a stuffing with bulgar wheat or barley

For those meatless fans I sent "Dede" our recipe for a "ground meat" substitute. It can be substituted weight-for-weight in recipes like this. It is nutritious, delicious, and good on texture. Wheat berries add "chew"; grain blend makes for a complete protein; toasted buckwheat (kashi) adds a toasty flavor; and the buckwheat and quinoa get soft enough to help bind it slightly.

yes you can definitely use some sauted veggies, just make sure to chop them up small and saute them the same way I did the meat :)

The way I've been eating this since I was a kid is to make the sauce a little bit thinner and eat it with rice on the side. I also put the dumplings in the oven for a few minutes before I add it to the sauce that way its guaranteed to keep its shape without me having to worry too much.

hi dede, i have yet to try this dish and i can't wait, it looksdelicious. I have seen some people bake the dumplings before adding to the sauce, i think that would make this more crispy.

Sauces thickened with a corn starch slurry also have a very particular texture. My guess is it also helps the sauce coat the dumplings better.
Lebanese food seems to have a slight French influence. I wonder how it would work with a roux. I guess the flavor may be a bit strong for the dumplings. But I'm not a fan of corn starch as a thickener. It reminds me of takeout Chinese food.
