Mujaddara Recipe (lentil & rice pilaf)

Cooked lentils are popular all over the Middle East and form the basis of many dishes. Mujaddara is a popular Levantine dish, and may be served on its own or with other vegetables and side dishes: it is equally good hot and cold. This dish is a main staple of the Syrian, Lebanese, Palestinian, Jordanian, north Saudi, and Israeli diet today, both in the Middle East and in North America. While once regarded as a poor man's dish, it is today considered a high-protein, balanced healthy food by many Americans. Total Time: 70 minutes Prep Time: 10 minutes Cook Time: 60 minutes Yield: 4 Level: Easy Ingredients 1 cup brown lentils 3/4 cup long grain rice 2 cups chopped onion 2 tbs cumin 1 tbs salt 2 tbs olive oil 4 cups water 1 cup Sauteed onions for garnish 2 tbs fresh parsley for garnish Directions In a 3 or 4 quart pot, on medium heat and add the olive oil then the onions, cook for about 5-6 minutes until brown and caramelized. Add the rice and lentils and stir with the onions, add the 4 cups of water and stir, add the salt, stir again and then cover and let cook on medium/low heat for about 40 minutes, stir in between. After 40 minutes add the cumin and cook for another 15 minutes and add another cup of water if necessary, cook until lentils are no longer hard. Spread the mujaddara in a plate and top with caramelized brown sauteed onions in butter. Serve with yogurt or salad.

My mom used to make it all the time when we were growing up. She never used cumin or butter. If I recall, she would cook the lentils until done, then in a separate pan saute the onions in olive oil until caramelized, then dump them on top of the mujadera and that was it. I am sure the cumin gives it a good taste but where my mom grew up (North Lebanon/Syria border area) they never used cumin.

In my family we fry the onions for 20-45 minutes til they're actually caramelized, as in, they taste sweet, and are brown-red all over...It takes a while cuz one has to stir it more and more often as the times passes, cuz if it burns it'll give the burnt taste to the oil which will then spread to the entire dish and then ruin it. It takes longer but for worth the effort if u're inlove wit hthat specific taste of swoly and fully caramelized onions. :-)

I have "attempted" to make this dish many times in the past in using my own recipe. I lost my Grandmothers recipe years ago, and have never been able to come even close to her masterpeice. This recipe of yours, is the BEST!! It was fool proof, and tasted better than I expected. We loved it! It would be so much fun cooking with you in the kitchen. Keep up the great work :)

@chantellegrace82 well yes you can but you will loose a lot of the flavor from cooking lentils. Just give it a try my way and I think you'll like it, it's a little bit more work, but well worth it :)

@dedemed oh and my Mjadara yesterday came out good...I haven't been liking the lentil I got lately I think they are too small...I need to get the ones that are alittle bigger in size but the extra cumin gave it an extra twist I liked it

going to make mjadara todayyy..will top it with caramelized onionss...and wow u added alot of cumin, I've always been scared to add too much..usually I just sprinkle but I will definitely try that much cumin today
