This is another great way of serving potatoes or an alternative to potato salad. It is healthy and very flavorful using low fat ingredients to wake up your taste buds. This dish goes great as a side dish for lunch or dinner and can be made ahead of time as well. Total Time: 35 minutes Prep Time: 15 minutes Cook Time: 20 minutes Yield: 4-6 Level: Easy Ingredients 2 lbs russet yellow potatoes, cut into cubes 1/4 cup capers 1 cup kalamata olives 2 tbs fresh thyme 1/4 cup chopped green onions 1/2 cup chopped fresh parsley 1 tbs fresh lemon zest 1 tbs ground coriander seeds 3 tbs red wine vinegar 4 tbs olive oil 1/2 tsp salt 1/2 tsp ground black pepper Directions Preheat oven to 400 degrees. Place cubed potatoes on a non-stick baking sheet, sprinkle with ½ tsp salt and bake for 20 minutes, remove from the oven and let cool. In a bowl, add the potatoes, capers, olives, parsley and green onions. In a smaller bowl mix the thyme, vinegar, coriander, lemon zest, salt, black pepper, olive oil and then add to the potato bowl. Mix all the ingredients together and serve with chicken kefta, lamb chops or any of DedeMed’s other great recipes.

  • 1/4 cup capers
  • 1 cup kalamata olives
  • 2 tbs fresh thyme
  • 1/4 cup chopped green onions
  • 1/2 cup chopped fresh parsley
  • 1 tbs fresh lemon zest
  • 1 tbs ground coriander seeds
  • 3 tbs red wine vinegar
  • 4 tbs olive oil
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Directions
