This is a variation of the traditional American style meatloaf and incorporates some traditional Mediterranean flavors with original meat loaf ingredients. This loaf of meat is very filling and hearty. If you like meatloaf then you will definitely like this dish and the new flavors that you will discover. Ingredients 1.5 lb ground chicken or turkey 2 tbs fresh chopped basil 1/4 cup fresh chopped parsley 1 cup shredded carrot 1 cup fresh or frozen peas 1 cup chopped onion 1/3 cup plain bread crumbs 1/2 cup parmesan cheese 2 tbs chopped sundried tomato 1 egg 1/2 tsp paprika 1/2 tsp cumin 1 tsp garlic powder 1.5 tsp salt 1.5 tsp ground corriander ketsup Directions Preheat oven to 400 degrees. In a large bowl mix together all vegetables, seasonings, bread crumbs, egg and cheese until well blended. Add meat to the vege mix and combine well with your hands. Spran a pan with nonstick spray, then form the meat mix into a loaf or you can bake the meat mix in a loaf pan, cover with foil and place in oven for 20 minutes. After 20 minutes of baking, remove foil and cook for another 20 minutes. Next spread top of meatloaf with ketsup and cook under broiler for another 5 minutes. Remove from oven and let rest for 10-15 minutes before serving. Slice into 1 inch slices and serve with mashed potatoes and salad.
