This dish is great to serve as an appetizer or main dish. It's fresh and light and easy to prepare. The lemon i refreshing and the shrimp are not to overly coated with dressing. You can make it last minute or prepare the parts in advance. Ingredients 1 lb raw shrimp, de-shelled and de-veined 1 cup chopped cilantro 2 tbs minced garlic 1/2 a lemon 1/2 tsp cayenne pepper 1/2 tsp salt 1/2 tsp black pepper olive oil 1/4 cup chopped parsley (for garnish) Directions In a medium pan on medium heat, add 3 tbs olive oil, garlic and cilantro, cook for about 3-4 minutes. Next, add shrimp, salt, black pepper and cayenne pepper, stir and cook for about 5 minutes. Lastly, squeeze the half lemon on top of the shrimp in the pan and remove from heat. In a nice large plate, add a bed of brown rice or pasta, then add shrimp on top and garish with chopped parsley. Serve with a spicy tomato sauce.
