Mediterranean Grilled Cheese Sandwich Recipe

This Mediterranean grilled cheese sandwich is a great alternative to the same old plain grilled cheese sandwich. Sometimes you’re just not in the mood for any meat and looking for some good comfort food, the grilled cheese sandwich hits the spot. You can use any cheese or herb that you like to make your perfect grilled cheese sandwich. Total Time: 25 minutes Prep Time: 10 minutes Cook Time: 15 minutes Yield: 4-6 Level: Easy Ingredients 1 loaf sliced rustic bread 8 oz. brie cheese 8 slices havarti cheese 8 slices colby jack cheese 1/2 cup freshly chopped basil 1/3 cup sun dried tomatoes 1 stick butter Directions Preheat oven to 450 degrees. Butter the bread on one side and place butter side down on a non stick backing sheet. Layer one type of the sliced cheese on each side of the bread, next add some thin slices of the brie on one side on top of the sliced cheese. Layer basil on one side on the slice as well and the layer sun dried tomatoes on the other slice. Bake the slices in the over for 10 minutes. After you remove them from the oven, close up the slices to form a sandwich. Next, preheat a pan on the stove top, add a 1 tsp butter to melt and toast the sandwich on each side for 1-2 minutes on each side until brown. Serve with DedeMed’s lentil soup or pumpkin soup recipe.

butter makes everything taste better! you don't have to use it if you don't want to but it does help the sandwich become more crispy and crunch :)

Oh yes, I do eat healthy...but to dream... You know if you alter it a bit to include egg (Veggie Omlette) and less cheese, you can have a pretty nutritious breakfast sandwich.
