A meat chop is a cut of meat cut perpendicularly to the spine, and usually containing a rib or riblet part of a vertebra and served as an individual portion. The most common kinds of meat chops are pork and lamb. A thin boneless chop, or one with only the rib bone, may be called a cutlet, though the difference is not always clear. The term "chop" is not usually used for beef, but a T-bone steak is essentially a loin chop, and a rib steak a rib chop. Ingredients 8-10 lamb chop cuts (1/2 or 1 inch thick) 2 tbs fresh chopped rosemary 1/4 cup lemon juice 3 tbs minced garlic 1.5 tsp salt 1/2 tsp black pepper 3 tbs olive oil Directions Preheat oven to 450 degrees. Pat down lamb chops with a paper towel in order to remove any excess moisture. Combine lamb chops with rosemary, lemon juice, garlic, salt, black pepper and olive oil. In a pan sear each side of the lamb chops for 3-4 minutes and then place on a non-stick baking sheet, poor remaining marinade over the lamb chops and cover with foil. Place baking sheet in the oven and cook for 15-20 minutes. Garnish with parsley and serve with batata harra potatoes or rice and tzatziki sauce.

very interesting, I use rosemary either way, it just depends on how much you like rosemary, it would be best to keep the rosemary but adjust the amount used if you are not to fond of the strong flavor.

Hi Dede. One comment I would add here. If you using New Zealand or Australian lamb meat, the rosemary is OK because the meat is gamey and the rosemary tend to neutralize the strong taste. If you are using Aamerican lamb meat, be careful. The rosemary might overwhelm the lamb meat. On American meat I used garlic and extra virgin olive oil instead of rosemary and worked great.

Very Very good. I saw loin chops for very high prices but instead bought a rack of lamb and cut up my own chops from that. Made these several times and they are awesome. Every dish of Dede's I have tried has been great. Thanks Dede!

.. try some ev olive oil in the pan when you brown them. Also, I wouldn't cook them with as much heat, no offense intended dede but you shouldn't have chunks of meat stuck to the bottom of the pan when you're cooking. Lastly, to have less of a gamy taste, be sure to wash them thoroughly and with the lemon juice you're going to use in the recipe, just let the chops soak in that 15-30 minutes before you start cooking them.

those chops are probably cut by saw.they are not proper med. cuts neither(see greek cuts)it is too high back.anyway they are sure very tasty with the way she cooked it.greets from germany...

Rosemary grows super easy in a sunny garden. Just one or two plants, planted in late spring, will give fresh rosemary for recipes all summer long. Then you can dry and save what's left at the end of the season. Grow an herb garden! It's easy, cheap, and tastes sooooo good!
