Kusa Mihshi is squash or zucchini stuffed with rice and meat. It is made in Syria, Cyprus, Lebanon, Greece and Turkey. This dish is served hot as a main course. This dish is flavored with mint and garlic. This dish is very hearty and filling and incorporates vegetables, carbs and proteins. Ingredients 10 -3 inch Mexican squash/zuccini (small squash) 1 lb ground beef or lamb 1 cup white rice rinsed 3 tsp minced garlic 1 tbs salt 1/4 tsp ground black pepper 1 tsp dried mint 1 20 oz can of tomato sauce 4 cups of water 1/2 tsp salt parsley leaves Directions Rinse squash. Cut off squash tops. Core out the middle of the squash with a corer. In a large bowl mix ground meat, rice, half of the garlic, 1 tbs salt and 1/4 tsp ground black pepper. In a large pot add tomatoe sauce, water, and salt and bring to a simmer. Lightly work in the rice stuffing into the squash, about 2 tbs each, and continue until all the sqaush are stuffed. To the tomato sauce, add remainder of the garlic and dried mint and stir. Slowly drop the squash into the tomato sauce and cover. Cook for about 35-45 minutes on medium heat. Let squash sit for 20 minutes before serving. Serve in a bowl with toasted pita bread on the side and garnish with parsley leaves.

I have a tip for you, I used to watch my mom when she carved the kusa , she first put the carver against the kusa from the outside to measure it and placed her thumb on the carver as a guide not to go beyond it, and that way you never puncture the kusa like you did :)

Dede--do you just quickly rinse the rice, or do you soak it? How about for stuffed grapeleaves (with meat)? When I soak the rice too long, it doesn't seem as savory...

May I suggest that the camera be closer to when you're cooking and not placed so far away? I find it even more interesting when I'm able to clearly look at what you're doing, that's a bit difficult to do when the camera is placed quite far away :\
