Ghallaba is a wonderful stew that is a mix of vegetables, tomato sauce and chicken or shrimp. It’s hearty and filling and easy to put together when you’re looking for a dish to soothe the soul.Total Time: 45 minutes Prep Time: 20 minutes Cook Time: 25 minutes Yield: 4-6 Level: EasyIngredients 1 tbs paprika 1 tsp cayenne pepper 3 tbs minced garlic 1/2 cup fresh chopped parsley 1 lb cut up chicken breast cubes (or cleaned shrimp) 1 16oz.can tomato sauce 2 cups water 1 cup chopped red onions 1 1/2 cup chopped carrots 1/2 cup chopped green pepper 1/2 cup chopped red pepper 1/2 cup chopped yellow pepper 2 cups chopped mushrooms 2 tbs DedeMed's Sumac spice 1 1/2 tsp salt 1/2 tsp black pepper 6 tbs olive oil Directions Prepare DedeMed's Brown rice recipe then set the rice aside. In a large pot on medium heat, add 3 tbs of olive oil and onions, next add mushrooms and 1/2 tsp salt, stir and let cook for 5 minutes until mushrooms are wilted. Next add the carrots and peppers, stir and cook for another 5 minutes. Remove vegetables from pot into a plate. Put the pot back on the heat and add 3 tbs olive oil and chicken and cook for 4 minutes. Next add garlic and stir, cook for another 3 minutes. Add the vegetables back to the pot with the chicken, stir well and add 1 tsp salt, tomato sauce and water, stir, then add cayenne pepper, paprika and black pepper, turn down the heat and let simmer for about 8-10 minutes. Make a bed of rice on a plate, scoop up ghallaba stew into the center, sprinkle with sumac and garnish with parsley leaves.

yes, there are many different types of ghallaba and each little area makes it a bit different.

I had Ghallaba for the first time from a Mediterranean restaurant a few weeks ago and it was delicious so I looked up the recipe and found your video. The Ghallaba from the restaurant is more of an orange color rather than tomato red color. Do some ghallaba recipes call for tumeric or curry powder? I'm wondering what they used to get the orange color?

How many grams/cups are in one serving size of ghallaba? I'm just curious because in every web page they state that 1 serving size can range between 330 to 560 calories, but really...what is the serving size amount to. I can't find it... is it serving size of 1 cup, 2, 3, etc. It would be nice to know. By the way, thank you for posting this video. This is one of my favorite dishes. So addictive. :)
