Bulgar with Vermicceli noodles Recipe (PILAF)
Recipe Categories: VegetarianSide DishLunchDinner
Written by

This bulgar pilaf dish is healthy and filling with complex carbohydrates. It is a great replacement for white rice and yet goes great with grilled chicken and a nice salad. You can even add chick peas to this dish to get your non-animal proteins. Ingredients 1 cup chopped onion 3 tbs butter 1 cup bulgar (no. 2 or coarse) 1 cup vermicceli noodles or shariyi 1 tsp salt 1/2 tsp cinnamon 1 chicken or veggie boullion (optional) 4 cups water 1 tbs fresh chopped parsley Directions On medium/low heat melt the butter in a 3 or 4 quart pot, add the onions and saute until lightly brown and caramelized. Then add the noodles and cook until lightly brown, continue to mix to avoid burning them. Next, mix in the burgul then add the 4 cups of water, give it a stir and then add the salt, cinnamon and boullion then bring to a light boil. Bring down the heat to low and cover and let cook for 30-40 minutes or until the bulgar is tender. Fluff with a fork garnish with parsley and serve with yogurt, chicken or salad.
