Brown Rice Mediterranean Style is basically a changed version of the traditional Mediterranean rice served in restaurants, by substituting the white rice for a more healthier brown rice. It is healthier and has a more rustic flavor. Ingredients 4 Cups of Water 1/2 cup Vermicelli Noodles 2 Cups of Brown Rice or (2 Cups of Long Grain White Rice) 1/2 Tsp of Salt 1/4 Tsp of Pepper 1 Vegetable Bullion Cube Directions Heat a 2qt pot on medium/low heat, add 2 tbs veggie oil. Add egg noodles and continuously stir until golden brown. Add 4 cups of water and veggie bullion and bring to a boil. When water has come to a boil, add rice, salt and pepper. Stir and cover with lid. Turn heat down to low and let cook for 45 minutes. Stir rice with fork at 20 minute intervals. Serve in a plate with stew or kabobs and garnish with sumac and chopped parsley.

I always make my brown rice with 2 times the amount of water as there is rice. The secret to cooking rice is, after the rise has absorbed the water and cooking is done, just turn off the heat, fluff with a fork and then let the rice sit with the lid on for about 15-20 minutes. You will get a fluffy rice and no excess water :) This should be the method to cook pretty much any rice.

looks great, but won't the amount of water/stock needed change if you use white rice compared with brown rice? i tried brown rice 3 times last year and every time it came out either too hard or way too soggy... :-(

Hello again Dede! Do I need to wash the brown rice like I wash white rice before adding it to pot? I am a big stickler when it comes to rice, I don't like it sticky or starchy. I just want to know how YOU do it so it can be authentic. :) Thanks!

yes, you have to let the water boil first, also after you turn off the heat, leave the rice covered for another 20 minutes if you find it still soggy.

Hi there, yes those are vermicelli noodles. As for the oil thing, it's personal preference , I do use olive oil occaisionall y as well. For the flavor you can use any one that you prefer.
