Brown Rice Mediterranean Style is basically a changed version of the traditional Mediterranean rice served in restaurants, by substituting the white rice for a more healthier brown rice. It is healthier and has a more rustic flavor. Ingredients 4 Cups of Water 1/2 cup Vermicelli Noodles 2 Cups of Brown Rice or (2 Cups of Long Grain White Rice) 1/2 Tsp of Salt 1/4 Tsp of Pepper 1 Vegetable Bullion Cube Directions Heat a 2qt pot on medium/low heat, add 2 tbs veggie oil. Add egg noodles and continuously stir until golden brown. Add 4 cups of water and veggie bullion and bring to a boil. When water has come to a boil, add rice, salt and pepper. Stir and cover with lid. Turn heat down to low and let cook for 45 minutes. Stir rice with fork at 20 minute intervals. Serve in a plate with stew or kabobs and garnish with sumac and chopped parsley.

yes, the cook time is less for white rice, that's why this one indicates to use brown rice. And you are correct, the regular boullion cubes are smaller, thanks for the note

you may want to point out that I think you use the Knorr Boullion cubes which are a lot larger than the small square ones most people have. I think you have to use 3 of those small ones to one of the ones you use? Also I think the cook time is less if you use white rice?

I use vermicelli noodles but if you can't have it then just omit it all together, that's what I do when I run out :)

the thing that make brown rice healthier for you is the extra fiber n vitamins that have been stripped away from the white rice. it is a great source of healthy carbs, much more nutritious and goes through your system faster. but REMEMBER brown rice still has as much starch as the white rice so over time neither of them are good to eat everyday. oh and brown rice naturally has more fat than white rice but the thing is brown rice doesnt need any oil added while cooking it, while white rice does.
