Description

Manakish or Manaeesh[1] (Arabic: مناقيش; sometimes called معجنات, ma-ujna'at, "pastry") is an Arabic food consisting of dough topped with cheese or thyme or ground meat, but used widely in many Middle Eastern countries. Similar to a pizza, it can be sliced or folded, and it can either be served for breakfast or lunch. the word manakish is the plural of the word mankousheh in arabic.

 

Recipe

Easy Dough (see recipe page)
1/2 cup Zaatar
1/2 cup Olive Oil
1/4 tsp salt
corn meal for pan
flour for rolling

 

Roll out dough into 4inch diameter rounds.  Mix zaatar, oil and salt together and spread 2 tbs on the dough.  Place dough on cookie sheet sprinkled with corn meal.  Cook for about 12 minutes on 350 degrees.  Serve with labne or olives, tomatoes and cucumbers.

Hi Dede

I am here in Canada and our local Haalal meat store has Manakish and
my husband loves them! They are so pricey to buy though so I am going to try to
make them with your recipe. Can you tell me how you do you meat for the top? I
know my husband would want them to have meat on top.

i tried it today but the bread was too hard do you know what i didnt wrong ?

One of the main reasons that bread gets hard is because you over knead it. DO
NOT overwork the the bread, just mix it until all the ingredients are combined
and then lightly knead and then let the dough rest. Sometimes you have to try
something a couple times before you get it right, it's just part of the learning
process.
