Laban bi Khyar or Tzatziki Sauce is a wonderful Mediterranean side dish or salad that goes great with sandwiches, rice or can be served during the summer days to cool down. This dish can also be referred to as Tzatziki sauce in Greece if you replace the mint with dill. It can be served with Gyros sandwiches as well.
Recipe
2 cups Mediterranean yogurt 1 cup cube Persian cuccumber 1 to 2 clove garlic minced 1 tsp dried mint (or dill) 1/4 cup water (for consistancy)
Mix the above ingredients and keep chilled in the refrigerator.

What kind of mint is it? Peppermint? I went to an Indian spice store and they sold me a bag of bulk mint leaves and it tasted like some other exotic spice with a hint of mint in it. I am looking for that strong mint taste that you get in Med. cooking. Any suggestions?

Well Mediterranean Yogurt is a little bit different. It has a different consistency and is a little bit more sour but in a different way than sour cream. I would suggest you buy then both and compare

Here is a hint for your readers that may have difficulty finding some of the authentic ingredients.
1. If you can't find Mediterranean-style yogurt, you can substitute regular plain whole milk yogurt. Line a strainer with cheesecloth. Spoon whole-milk (don't use lowfat) yogurt into the lined strainer, and set it over a mixing bowl to drain. Place in the refrigerator overnight. The following day, the yogurt in the strainer will be about half of it's original bulk, and a lot firmer. This is due to the whey (yellowish liquid) has drained into the catch bowl (save it for vegetarian friends). Add a Tsp of lemon juice to make it tangy.
2. If you can't get Persian cucumber, look for small "pickling" cucumbers. If the big cucumbers are the only thing available, quarter them, seed them, then shred with the disc in the food processor. Place the shredded cucumber in a strainer over a bowl, to drain. After dra...
