Description

Fatayer or Spinach Pie is a pizza-like foods eaten by the people of the Mediterranean. simboseh and fatayer are baked or sometimes fried doughs stuffed with minced meat and cooked onions or snobar (pine nuts).Fatayer is usually folded into triangles and unlike simboseh, it could be filled with spinach or za'atar.

 

Recipe

easy dough - see dough recipe
8 cups spinach
1/2 tsp salt
1 cup chopped onion
1 cup chopped tomato
1/4 cup lemon juice
1/4 cup olive oil
1/2 tsp citric acid
1/4 tsp cayenne pepper
1/4 tsp sumac
1/2 cup corn meal
flour to roll out dough
olive oil spray or brush to finish pies

 

Combine the 8 cups of washed spinach with 1/2 tsp salt and let sit for 15 minutes, if using baby spinach do not chop, if using regular spinach then chop up first. Drain and squeeze out water from spinach and place in a bowl.  Add next seven ingredients to spinach and combine.  Roll out dough balls to 1/16 inch thickness and 6 inches in diameter, place 1 to 2 tbs of spinach mixture in middle and close dough like a triangle.  Sprinkle corn meal on baking sheet and place triangles on sheet.  Pre-heat oven to 400 degrees, place pies in oven and cook for 8 minutes, then take them out and spray or brush them with olive oil, place back in oven for another 8 minutes.  Serve warm or cold.

I made your fatayer recipe today following your instructions to the letter.
However, with the tomatoes and 1/4 cup lemon juice, I had juice running out of
the pies all over the tray. In addition, the crust split open along some of the
sides and were unsightly. Please tell what you think happened.

Teslami Dede. The Spinach Pie was the first receipe I try. I even had to go
around asking about the citric acid and found it at the Pharmacy. It came out
really good. Delicious. Compliments for your videos. You captivate me.

Any thaughts to avoid them from being over crispy!, does it have to do with the
oven or with the dough?

Hi Dede...I have the same question as some. Do you cook the spinach down first?
Or did you just wash it and chop it? Thanks for your help!
