Hummus or hummus bi tahini (Arabic: حُمُّص) also spelled hamos, houmous,
hommos, hommus, hummos, hummous or humus) is a dip or spread made of
blended chickpeas, sesame tahini, lemon juice, and garlic.
In Arabic the word hummus is used to describe the dish or just chickpeas
by themselves. The full name of the dish is hummus bi tahina (Arabic:
حُمُّص بالطحينة) "chickpeas with tahini". Hummus is popular in various
local forms throughout the Middle Eastern world.
Recipe
1/4 Cup Yogurt
1 Can Garbanzo Beans "Chick Peas"
1/2 Cup Tahini (Sesame Seed Paste)
1/2 Cup Lemon Juice
2-3 Cloves of Garlic
1/2 Tsp of Salt
1/4 Tsp citric acid "if you need more lemon taste"
2 Tbs water "if to thick"
3-4 Fresh Mint Leaves "for taste"
2 Tbs of Fresh Parsley "for garnish"
1 Tsp of Cayenne Pepper or Paprika "for garnish"
1/4 Cup of Olive Oil "for garnish"
Mix first 9 ingredients and blend until smooth and to desired
thickness. Garnish with parsley, cayenne pepper and olive oil.
Dede - Congrats on your new venture. I watched your videos the entire weekend as my doctor has put me on the Mediterranean diet and I know nothing about this type of food. I live on the border of Mexico and the foods I eat are primarily mexican, so it's a big change. A question, my hummus recipe tastes a little like peanut butter. Am I using too much tahini? I mixed it up because it was separated in the jar, but other than that I followed the recipe, only adding chili powder :-). Thanks for all you help!!!!

Hi Dede:
While going through your list of recipes I saw something with the logo of the Wall Street Journal and out of curiosity I clicked and there you were with your husband. Congratulations Dede. This is great news to see you making something different and those soldiers coming back from the Middle East would still love to eat the great food. Dede I have a clipping from a magazine going quite a number of years back where many American people who lived in Lebanon during the Civil War did not want to leave Lebanon and return back to the US. That made my husband and I cry since my husband misses home badly. You might have heard stories from your parents about Lebanon. You are young and a few years younger than my daughter and my son. I wish to send you my best wishes and congratulations on that great review.

I usually store my tahini in the cupboard and it's good for about 6 months.
