Fattoush (Arabic , فتوش ), often pronounced "fadash", is a Lebanese salad made from several garden vegetables and toasted or fried pieces of pita bread. Fattoush salad allows cooks to use seasonal produce by mixing different vegetables and herbs according to taste, and also to make use of pitas that have gone stale. The vegetables are cut into relatively larges pieces compared to Tabbouleh which requires ingredients to be finely chopped. Sumac is usually used to give Fattoush its sour taste.
Recipe
2 cups Romain Lettuce finely chopped
1 cup red cabbage shredded
1/2 cup orange pepper diced
1/2 cup red pepper diced
1/2 cup green pepper diced
1 cup shopped cucumber
1/4 cup radish diced
1/2 cup diced tomato
1/4 cup carrot shredded
1/4 cup green onion chopped
1/4 cup red onion chopped
1/2 cup parsley chopped
1 tsp. dry mint
2 tsp. sumac
1/2 cup lemon juice
2 to 3 cloves garlic minced
1/4 cup extra virgin olive oil
1 cup pita chips
Chop up the first 12 ingredients and place in a large bowl. In a small bowl mix the mint, sumac, garlic, lemon juice and olive oil. Piece the toasted or fried pita chips into 1/2 inch bits. When ready to serve, mix all of the vegetables then add the dressing and mix. Top with pita chips.
There was a place in my hometown of Dearborn and their Fattoush had a little kick to it,kinda opened your nose at first. I'm sure it was vinegar, but what type might I use and how much. Thanks. Keep up the fantastic work.

i have been looking for a recipe for the fattoush dressing its the only salad my grandchildren will eat is their a good marrinate recipe for chicken to use something like they use in the restrauauts thanks

This is the best salad I have had in a looong time!!! I'm on a weight loss program right now, and this salad has help me get in all my veggies. Thanks sooo much.

My husband and I think it is too sour - I guess I will use less lemon? We loved the salad though!

The lady who said the salad was too sour: I listened to the video then looked at the ingredients. I think Dede says 2 tbs. of sumac but the list shows 2 teasp. That could account for the sour, correct. I'm going to make it next weekend and I'll use the 2 teasp. Expect it to be good as all the other recipes have been. We are hooked on the Chicken Shawarma. Anxious to have the rice pudding recipe. Thanks a bunch from Sterling Heights, MI

Thank you, Thank you, thank you. I stumbled into your site and I love it. For the Fatoosh, I use toasted pita bread instead of fried. No carrots. Also I add a little vinigar.
