Brown Rice Mediterranean Style is basically a changed version of the traditional Mediterranean rice served in restaurants, by substituting the white rice for a more healthier brown rice.
Serves: 4
Difficulty: easy
Prep & Cook time: 1 hour
Recipe
4 Cups of Water 1/2 Cup of Thin Egg Noodles 2 Cups of Brown Rice or ( 2 Cups of Long Grain White Rice) 1/2 Tsp of Salt 1/4 Tsp of Pepper 1 Vegetable Bullion Cube
Heat a 2qt pot on medium/low heat, add 2 tbs vege oil. Add egg noodles and continuously stir until golden brown. Add 4 cups of water and vege bullion and bring to a boil.
When water has come to a boil, add rice, salt and pepper. Stir and cover with lid. Turn heat down to low and let cook for 45 minutes. Stir rice with fork at 20 minute intervals. Serve in a plate with stew or kabobs and garnish with sumac and chopped parsley.

Hi Dede!you've got some great recipes here.I live here in Qatar and recently i had this awesome rice dish from an Egyptian restuarent(its a small place and nobody speaks English). Its plain yellow rice(tastes heavenly!)with grilled chicken, potatoes(looked red but not hot) and this soup or broth with loads of pine nuts.
I so want to know what those are and the recipes because that seem to be the only rice dish my twin toddlers seem to eat.
Dede, hope you will help me out...thanks a million..

Thanks Dede! Looks great. I love brown rice cooked in the mediterranean way. One question, can I omit the bouillon cube? I don't use these because of the MSG in them. Will it still taste fine or should I add vegetable broth to it?

hi Dede!...this is my first time on your website and I think its awesome because Im partialy Lebanese but unfortunately I dont live there.Ive been to Lebanon many times so I know mostly all the recipes you made.
I didnt come to change your recipe or anything, its just that I make brown rice all the time because Its my all time favourite dish I learned from my aunt in Lebanon and I dont know if u have diferent recipe but the important this when making this kinda rice is to cook it few minutes after you brown the noodles and then add the water. That makes it even better and prevents it from stickying...I also love to add rice spices and pine nuts which are traditional.
anyway,I love your website and thanx a lot for showing all the recipes!!!....gd luck and bye!!
