Description 

 

Malfoof (also stuffed cabbage) is a dish consisting of cooked cabbage leaves wrapped around a variety of fillings. It is common to the peasant cuisines of Europe and the middle east , and has also found popularity in areas of North America settled by Eastern Europeans.

 

 

Malfouf (Malfoof) Recipe:

Serves: 4-6
Difficulty: Medium
Prep and Cook time: 2 hours

1 whole head of Cabbage
1 lb ground beef
1 cup white long grain rice
3 tbs minced garlic
1 tsp salt
1/2 tsp black pepper
1 32oz can of tomato sauce
2 tsp dried mint
1/3 cup lemon juice
3 tbs butter

Cut out core of cabbage head and put core side down in a pot, add water to cover cabbage and cook on medium heat for about 30 minutes for cabbage leaves to separate.  Poor off hot water and cover with cool water to stop the cooking of the cabbage leaves, let cool.  Next, prepare the stuffing mix.  Rinse the rice in water and drain. In a bowl combine rice, meat, salt, black pepper, and 1 tbs of garlic.  Next, separate the cabbage leaves and trim down the thick veins in the leaves.  In a pot, lay 2 leaves on the bottom of the pot to keep cabbage rolls from sticking.  Next, lay leaf down flat, place about 2 tbs of stuffing in a row and roll leaf tight.  Place rolls in the pot in a row, next sprinkle some of the garlic and mint on top and pour about 1/2 cup of the tomato sauce then repeat the layers. After the last layer, cover the rolls with a dish smaller than the opening of the pot in order to keep the leaves in place.  Pour the lemon juice on top and cook on medium heat for about 40-45 minutes.  Let stand for 10-15 minutes after cooking and serve with yogurt and pita bread.

Tislam Edek ya didi ,I just have 2 questions: Can I use the same stuffing in
doing stuffed grape leaves with meat ?or is it diffrent? and the 2nd question is
(Is the amount of lemon juice added to this recipie enough to cook all the
cabbage leaves??Can I add some water if it seems dry???)

HI Mariam,
homemade tomatoe sauce is pretty simple, just cut up a lot of ripe
tomatoes but try not to add to much of the seeds. Put them in a pot with about
1 teaspoon of salt and then simmer slowly for about 1 hour. After that use a
hand blender and just blend them up and there you go, home made tomato sauce

If preparing for large group(35) can you put the rolls in the oven for
the step if yes how long?

Yes you can put them in the oven but you need to add extra liquid, cover them
with foil, I would say to cook them at 450 degrees for about 45 minutes to an
hour or until you try one and the rice is done.

Thank you for taking the taking the time to video your recepie. It makes it
that much easier to understand vs just reading it.

Can you tell me what is
the red sauce you used for the stuffed cabbage. Is it just tomato sauce or is
it something homeade by you. If just canned tomoato sauce....what brand?
