Green bean stew, better known as Lubya, is wonderful and healthy Mediterranean dish that incorporates both protein and vegetables with a robust flavor. This dish is very versatile and can be cooked with beef, lamb, chicken or you can omit the meat and make it a vegetarian dish. It is traditionally served with rice and is an all around crowd pleaser.
Recipe
2 lbs. fresh or frozen cut green beans 1.5 lb cooked cube beef(shank) or lamb or chicken 1 16oz can plain tomato sauce 1 cup chopped cilantro 1 cup chopped onion 8-10 cloves minced garlic 2-4 cups broth 1/4 cup olive oil 1/2 to 1 tsp salt 1/2 tsp black pepper
Follow step instructions in video. Cook green beans and onions in olive oil until slightly tender. Add cilantro and garlic and toss. Add tomato sauce, broth, salt and pepper and cook for 15 minutes. Serve with rice. See rice video for recipe.
Sorry I think the last half of my message disappeared. Dimassi's is the restaurants name in Houston. Then, under their menu items, they have a 'Dimassi's eggplant' with a brief description of the dish. It says something about pomegranate mosses, olive oil and diced pepper. Im wondering if this is just one of their special creative dishes, or is it a common med. dish?
Ok there are 2 Mediterranean dishes in which people often confuse the names. Mutabal Batinjan is when the eggplant is combined with sesame paste, lemon juice and garlic. Baba Ganouj is when eggplant is combined with lemon juice, garlic and olive oil, then topped with chopped parsley, tomato, green onion and sometimes green pepper. A lot of restaurants list baba ganouj on their menu when it's actually mutabal batinjan. You can check out my recipe for mutabal on my website, I have it listed as baba ganouj too b/c that's what most people think it's named. Either one of these eggplant dishes can be topped with pomegranit syrup and pieces, parsley, onions or any vegetable you want. Let me know if you have any questions.

I am actually looking for a recipe for an eggplant dish that I always get at the Med. rest. that I go to. Now, I know for sure it is not Baba Ganoush. It is not processed in a blender for sure.
