Hi Naser,
THe Labneh video is coming soon but here's a brief recipe. If you do not know how to make Mediterranean yogurt then you can just buy Greek or Mediterranean yogurt from the store. You will also need a cheese cloth. Place the yogurt in the cheese cloth and then squeeze it tight. Place it in a strainer over a bowl and in the refrigerator for 2 days. After 2 days the yogurt should be firm and it is now labneh.
Try this recipe
# a 7-ounce jar roasted red peppers, drained
# 2/3 cup fine fresh bread crumbs
# 1/3 cup walnuts, toasted lightly and chopped fine
# 2 to 4 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
# 1 tablespoon fresh lemon juice, or to taste
# 2 teaspoons pomegranate molasses*
# 1 teaspoon ground cumin
# 1/2 teaspoon dried hot red pepper flakes
# 3/4 cup extra-virgin olive oil
Just blend it all in a food processor and serve with toasted pita bread.
Dede, I love your recipes. Would you please do a video on kibbe hamoude? I am crazy about this dish after living years in the ME, and would really like to try making it myself....
Looking forward to your lebneh video Any idea when it might be posted?
Thank you so much for the recipes you have posted so far, most of these I grew up with and miss them very much!
I actually just enjoyed some sharma today at a local place and they had a sort of seasoning blend on their french fries, any idea what this might be? Some of my guessing for ingredients would be salt, paprika, garlic....not sure what else. Does this ring any bells for you? I would love to make it at home!
Thank you again!
Hello,
The labneh video should be out very soon
You are very close with what you think the potatoes are seasoned with, it is salt, paprika, garlic powder, black pepper. Always season potatoes immediately after frying or cooking them.
HAPPY COOKING!
Dede - so glad I found you!! As a Central Pennsylvania Dutch man, I do have a wide variety of tastes, and I find Mediterranean quite good. I am making my first try at hummus, but I'm varying from your recipe a litt - I'll drop a note and let ya know what I did if it is good! Look forward to using your rcipes, and anticipating the moussaka!
I think I've been making your hummus almost weekly since I watched it. And love it and the hummus with meat! Being someone who can't get enough, I was hope you might have a good recipe for chicken and hummus, lamb, or ghallabe (spelling?). I've done the shish twook on it, but just looking for more delicious varieties. Might be too soon for those. Just keeping my fingers crossed. Again thank you for all your hard work!
Hello, I'm glad you are enjoying my hummus recipe
I will be making ghallaba soon. You can top hummus with pretty much any meat or protein. You can try sauteing chicken, beef or lamb strips with onions, salt and pepper and then top that on the hummus, it is amazing.
