Hummus also spelled hamos, hommos, hommus, homos, houmous, hummos, hummous, or humus is a Levantine Arab dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is a popular food throughout the Middle East and elsewhere. It is found in almost every grocery store and is quickly replacing salsa as a party appetizer. It is great because it is also healthy, full of protein and fiber from the beans that are used. It can be used as a dip or a sandwich spread. NOTE: if you don't want to use canned chick peas, purchase dried chick peas, soak in a bowl of water to the brim, overnight. Drain the chick peas and pour them into a large pot, with water to the brim just to cover the chick peas, add 1 tbs baking soda, cook on medium low heat for 1 hour or until the chick peas are tender and easy to smash with our finger. Ingredients 1/4 Cup Yogurt 1 Can Garbanzo Beans "Chick Peas" 1/2 Cup Tahini (Sesame Seed Paste) 1/2 Cup Lemon Juice 2-3 Cloves of Garlic 1/2 Tsp of Salt 1/4 Tsp citric acid (if you need more lemon taste) 2 Tbs water (if to thick) 3-4 Fresh Mint Leaves (for taste) 2 Tbs of Fresh Parsley (for garnish) 1 Tsp of Cayenne Pepper or Paprika (for garnish) 1/4 Cup of Olive Oil (for garnish) Directions In a food processor, first add the garbonzo beans, garlic, lemon juice and salt, blend until smooth. Next add, yogurt, tahini, water and mint leaves. Optional, if your consistancy is the way you want, but you want more lemon flavor, add citric acid to enhance the flavor. Hmmmm not sure what it is. The only one I can think of is harissa. but then again, each region and even family has their own version. Sorry :(

Love your videos! Quick & silly question. In New York (Manhattan) there are a gazillion corner vendors of falafels & chicken on pita ("gyros") seems like most of the vendors are from Yemen. They have an absolutely delicious dark "hot sauce." Any idea what that stuff is? (and, of course, how to make it) It's not harissa, but maybe contains some?

Well yes, I have heard to skin all of the chick peas but I personally have never tried it, that would take hours. So what you can do is to boil your chick peas for 10-15 minutes in a small pot with enough water just to cover the chick peas, then drain them and put them in the blender while they are warm, after they are well blended, let them sit and cool then start making your hummus.

Hey DeDe, love your site! I have a long time question about hummus. I LOVE hummus from restaurants and from the store. However, whenever I try to make it at home, it never seems to get that creamy "smooth" consistency. I have a vitamix even and still can't get the same texture. Someone once told me to remove all the skins from the chickpeas but I never read that in any recipes. Any suggestions?? Thanks!!

what is ratio of check peas( Garbonzo Beans) to Tahini. is it one cup of Garbonzo Beans to 1/2 cup of Tahini?

yes you can definitely use lime juice, you may want to reduce the amount a little and then just omit the citric acid :)
