The Best Hummus Video Recipe "Re-Released"
Hummus or hummus bi tahini (Arabic: حُمُّص) also spelled hamos, houmous, hommos, hommus, hummos, hummous or humus) is a dip or spread made of blended chickpeas, sesame tahini, lemon juice, and garlic.
Recipe
1/4 Cup Yogurt
1 Can Garbanzo Beans "Chick Peas"
1/2 Cup Tahini (Sesame Seed Paste)
1/2 Cup Lemon Juice
2-3 Cloves of Garlic
1/2 Tsp of Salt
1/4 Tsp citric acid "if you need more lemon taste"
2 Tbs water "if to thick"
3-4 Fresh Mint Leaves "for taste"
2 Tbs of Fresh Parsley "for garnish"
1 Tsp of Cayenne Pepper or Paprika "for garnish"
1/4 Cup of Olive Oil "for garnish"
Mix first 9 ingredients and blend until smooth and to desired thickness. Garnish with parsley, cayenne pepper and olive oil.

Can falafel be made a couple of hours ahead of time and kept warm in a 200 or so degree oven? Is it best to keep it covered or uncovered while it's being kept warm? My phyllo leaves on top of my baklava curled up while baking. How do I prevent that in the future? Thank you so much! Just LOVE your site and your videos!

Well, yes you can make it ahead of time but it's just like french fries, they only taste good when they're fresh. But if necessary, you can keep them warm in the oven covered. And for the baklave, just add some more butter between the top layers

I have one problem with my falafel. I find that when I try and use the spoon device (metal falafel maker thing) that the falafel falls apart. I have also been told to put the falafel into a mix before cooking (a mix of 1 cup of flour, rounded tea spoon of paprika and a nice pinch of salt) can I have your views please, as you seem to be the expert out there to be asking.

I have never heard of putting the falafel into a mix. I think if your falafel are falling apart then you need to add 1 or 2 tablespoons of flour to the mix and pack it very well when you are molding the falafel, this should help

your site is great,watched your kibbeh recipe.looks good but i dont remember my sito making it like that.it was always in a square pan &either cooked or raw(kibbeh nay??)and did not have the bulger layer,meat stuffing and another layer.also no footballs.is that another recipe or a differant variation.i would love to get those recipes.thanks and great job again
